Grabbing a portion of fries sounds simple, until you see how much attention Dapp puts into it. At the Aalmarkt, organic potatoes are processed into fresh fries in the shop every day. And that craft has since received international recognition: Dapp became world champion of authentic fries in 2025.
Founder Siem van Bruggen won the World French Frying Championship in Arras, France, in the authentic fries category. With that, Dapp can officially call itself world champion. A rather special title for a fries shop in Leiden where you simply walk out the door with a paper cone.
From potato to fresh fries
At Dapp, the work doesn't start with opening a bag of frozen fries. The organic potatoes are cut in the store and carefully prepared before finally being fried as fresh fries.
The goal is fries that are crispy on the outside and remain soft on the inside. After that, it's up to you: classic with mayonnaise or choose from one of the other sauces and combinations on the menu.
In addition to fries, various snacks are available, and Dapp also has vegetarian and vegan options.
World Champion French Fryer
In 2025, Dapp founder Siem van Bruggen traveled to Arras in Northern France for the World French Fry Championship. There, he competed against international participants in the authentic fries category.
His creation ultimately earned him the world title. With that, Dapp officially became the world champion of authentic fries.
Moreover, at Dapp, frying fries is treated seriously as a craft. Employees are trained in the preparation, and competitions are organized within the company to further develop technique and product knowledge.
Fries from the Leiden canal
The branch on the Aalmarkt has something else you won't find at every chip shop. The shop is located right on the water, and visitors exploring Leiden by boat can also get their fries here.
You can moor your boat at the Aalmarkt and place an order. This way, a boat trip through the Leiden canals does not have to be interrupted for a fries stop.
For those who prefer to eat at home, Dapp delivers in Leiden with its own bicycle couriers. Of course, you can also pick up your order.
A Leiden branch with its own identity
Dapp opened the store on the Aalmarkt in 2018. Thijs started there as a team leader that same year and took over the branch as a franchisee a year later.
Since then, he has run the Leiden shop based on the same philosophy Dapp started with: not treating fresh fries as a quick side dish, but as a product that deserves attention and craftsmanship.
Whether you want to grab a bite to eat while shopping, are docking from a boat, or are specifically curious about a world champion's fries: at the Aalmarkt, you know for sure that Dapp takes his fries seriously.
